Fishing is fairly basic in this game. You need to obtain the Fishing Rod from Gilbert in his Introduction Event by the Lake. You cannot upgrade this tool, and there are only a few fish to be caught.
There are three different fishing locations until you have the Memory with Brutus that builds bridges to the east and south of your farm.. One is the River to the East of your Farmhouse. Another is the Lake to the West of Brutus' Forge. The third is the little body of water to the West of Hunter's Animal Shop.
Once the bridges have been built, you will have access to the other side of the river but, more importantly to a peninsula in the southwest of your farm, across the bridge. It is here that I caught the Alligator Gar and Rainbow Trout in my first summer. It is possible that Rainbow Trout can be caught in other locations, but I suspect this is the only place where you can find the Alligator Gar, the 'Legendary Fish' in this game.
Although the game will advise you to use Bait, you do NOT need this to fish. As with any tool use in the game, simply make certain that you are in the Tools/Farm Mode to cast your Rod. You will see a series of squares in the water when you are at a likely spot. If there are any fish currently at this location, you will see them swimming below the surface of the water. You will have the following option:
No Animal Feed
Bait/Good Bait/Excellent Bait
If you want Bait, you can purchase it from Sam.
Choose 'No Animal Feed' to fish without bait.
When an exclamation point appears, tap the screen again and again to catch the fish. Very basic!

Some Fish can be cooked and eaten and others only can be shipped.
Buy the Recipe for Grilled Fish and you will be able to cook the following:
Grilled Rainbow Trout
Grilled Perch
Grilled Yellow Perch
Grilled Bullhead
Grilled Bluegill
The Recipe for Fish Meuniere uses a choice of Fish, including Bluegill and Rainbow Trout. The Recipe for Grilled Arowana uses ONLY Arowana. In other words, the first Fish Recipe you should buy is the one for Grilled Fish. To make any sort of Grilled Fish, you need only the Fish itself and some Salt. Salt can be purchased from Hanna for 30G. Sugar is another Basic Ingredient that costs 30G and can be purchased from Hanna. You need it for all Jam Recipes.
Rainbow Trout: 300G
Lives upstream in summer and fall. Very tasty.
I caught my first Rainbow Trout fishing from the Peninsula in Summer I believe.
Alligator Gar: 1000G
Said to be the legendary fish in the land.
I caught all my Alligator Gars on the Peninsula below my farm. You will receive Alligator Gar if you win the Fishing Contest as a Reward.
Arowana: 700G
Large fish that can be caught in summer.
You may receive your first Arowana as a Reward for experiencing a Memory.
The Arowana you receive as a Reward will not count towards your Collections, however. You need to catch it yourself to be added to the list.
I caught my first Arowana on the Peninsula below my farm on the last day of Summer.
Bullhead: 300G
Rare fish that can be found in fall. Very tasty.
I caught my first Bullhead on 1 Fall fishing in the little area to the west of Hunter's house in the village.
Perch: 350G
Found in Spring and Fall. Edible.
I caught my first Perch from my farm in Spring before the Bridge was built. Caught it again in Autumn when fishing in the Village.
Goby 300G
Found in fall. Edible.
Caught my first Goby in Summer and again in Autumn. All locations.
Barbatus: 300G
Found in every season but Winter.
Caught my first Barbatus in Summer fishing from village and then Peninsula.
